Coconut milk


This recipe makes 1 cup thick milk and 2 cups thin milk
½ large fresh coconut
3 cups water
1)  Grate the coconut and blend it with 1 cup lukewarm water in a liquidizer for 2-3minutes.
2)  Strain through a fine meshed strainer, squeezing the coconut gratings until all the milk is extracted. This is the first milk and the thick extract.
3)  Blend the residue with 2 cups lukewarm water and strain the second extract in the same way.
4)  If the coconut is fresh, the second extract will also be quite thick. In this case, add one more cup of water to the residue and extract the milk, which will now be thin.
