Vendakka pachidi


Tender ladies fingers fried crisp and mixed in a special yogurt, coconut , chillies mixture, is a must at many festivals like Onam, tamil varsu parupu, weddings and at temple feasts. A must try dish
Preparation time ----15 min
Serves ---5-6
Ingredients
1 kilo ladies fingers.
½ cup grated coconut
1 cup yogurt which has whey removed.
4 green chillies.
¼ ginger grated.
1 teaspoon mustard seeds
¼ spoon  cumin
A pinch of asofetidia.
1/ cup cut green coriander ground with green chillies.
9 curry leaves.
Method:
1)  Select tender lady's finger.Wash, wipe it dry and cut off the crown and the tip.
Cut it into thin slices. This is very important.
Shallow fry the lady's finger along with chilli in oil till brown and crisp. Keep aside
2)  Grind the coconut, green chillies, coriander withe thick yogurt.
3)  Add salt and add  seasoning of mustard seds, red chillies, cumin and curry leaves.
Add salt to the mixture, now add the fried ladies fingers.
this is a unique dish  made only in south india, especially in Tamil Nadu, Kerala and parts of Andhra and Karnataka. . The coconut is used only in some places.
Pappu Pache pacheEallai
Greens tossed together with roasted onions, peanuts, snake gourd, cucumber and dressed with lime. Jaggery powder and crushed green chilly juice.
Cooking time – 10mins
Ingredients
2 large onions, sliced into wedges
1 cup Sesame oil
1 tablespoon white jaggery
1/2 cup coconut milk.
2 Red chiilies
¼ spoon white seasame seeds.
6 teaspoons green chillies/  lime juice
14 cups mixed salad greens
1 cup toasted chopped walnuts /peanuts
1/2 red onion, thinly sliced
1 cucumber diced tiny.
1 snake gourd, de seeded , skin scraped and shred.

Method

1)  Sauté the large onions In  a pan , in seasame oil over medium flame
2)  Add red chillies, peanuts and seasame seeds. Sauté and remove.
3)  Grind the above and keep aside.
4)  In a bowl pour the coconut milk,add salt, lime chilly juice,the onion paste and some seasame oil.
5)  Add the snake gourd, cucumber, and the greens .
6)  Add the nuts and jaggery powder and mix.
7)  Add red chilly flakes and salt.
8)  Place in a large salad bowl,
9)  combine green Sprinkle with remaining walnuts and red onion and serve.
