There is a variety of rice dishes made in the
southern states , for prasaspossible to share all but putting down their names
as they are an integral part of southern divine heritage cooking. Ven pongal, lime rice, curry leaf rice,
coconut rice, vegetable rice, podina rice, coriander rice,til seasame rice and
the list is endless. Also important aspect of the meal are the accompaniments
the hundred odd pickles, the pappadam or appalam, the crispies and fry yums
called vadam, the dried chilly fry etc . YOGURT IS ALSO AN IMPORTANT ASPECT I
ALL SOUTHERN STATES. Ponni and samba are two important rice used here. The
fryums and crispies are made at home . most pickles are made at home .
narthanga , gongura , mavudu and marthavallikanu are unique pickles available
only in the south.
