A combination of chicken and potato in the
Pondicherry style, makes its appearance at any special celebration. Auroville
is the dream of Mother ,where all communities live in harmony celebrating all
festivals and special days . This special puducherry fare sees the influence of
French on it ,and indianised to suit our palate. This recipe is not available
anywhere.
Serves 5-6
Ingredients
1
cup cubed potatoes (1/2-inch cubes)
Cooking
spray
1/8
teaspoon salt
1/8
teaspoon pepper
2
tablespoons water
2
tablespoons lime juice
1
teaspoon dark sesame oil
1
teaspoon honey
1
teaspoon grated peeled fresh ginger
3
cups chopped romaine lettuce
2
ounces grilled or baked skinless chicken, chopped
2
tablespoons chopped peanuts
1
tablespoon chopped fresh mint
1
tablespoon chopped fresh coriander
Method
1) In a bowl pour
the lime juice, and oil
2) Add the chicken
pieces which have been grilled nicely in a tan door or over fire.
3) Add the small
boiled potato cubes.
4) Add the honey,
mint, coriander and shredded ginger.
5) Add the chopped
peanuts and chilly flakes[optional].
6) Now mix
everything well.
7) Place the lettuce
leaves on individual plates and place some of this mixture on each. Sprinkle
peanuts on top.
