Chefs tanjore special chicken salad


An innovative salad made in private Christian homes for festivities. This is not a recipe which has been shared and is an original discovery.
Serves   5-6

Ingredients

1 cup cubed potatoes (1/2-inch cubes)
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons water
2 tablespoons lime juice
1 teaspoon cooking  seasame oil
1 /3 cup jaggery powderd
1 teaspoon grated peeled fresh ginger
3 cups finely  chopped green, red capsicums
¼ cup grated baby coconut.
½ cup shredded boiled egg.
1 cup  cooked over firewood or smoked  skinless chicken, chopped
2 tablespoons chopped peanuts
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh coriander
¼ spoon red chilly flakes.

Method

1)  Boil the potato with the skin till tender and then cool and peel.
2)  Combine lime juice, oil, honey, and ginger in a small bowl; stir well with a whisk.
3)  Mix oil, lime juice, salt , pepper, jaggery,  shredded capsicums, shredded egg, chicken , peanuts, mint and coriander, small potato cubes, oil a little warm water and mix together .mix a little chilly flakes in it. Serve  fresh .
